Coriander: Cool-season favourite in all regions; bolts quickly in summer heat. Succession plant every 3 weeks from March-September in warm areas for continuous harvest. Prefers morning sun and afternoon shade in inland regions.
Oregano and thyme: Drought-tolerant Mediterranean herbs; excellent for water-conscious gardeners. Require well-draining media and full sun. Thrive in all Australian regions; particularly valuable in WA and SA where water restrictions apply.
